The 5 best autumn recipes, and their wine pairings!

As autumn settles in, the landscapes take on their beautiful shades of brown and we pull the blankets out of the closets. The pumpkin, cinnamon, Halloween mood has invaded our feeds and we’re not going to lie, we love it! In the kitchen, we’re once again dreaming of gourmet, comforting dishes. We’ve selected the 5 best autumn recipes and, to make life even easier, their wine pairings. Here we go!

  • Pumpkin risotto

We’re following the basic risotto recipe, but adding pumpkin for an even creamier twist! Add the pumpkin cubes at the same time as the arborio rice, pouring in the stock a little at a time until the texture melts.

Pair with a lively white wine like our Versant sauvignon blanc.

 

  • Pear and hazelnut gorgonzola tart

An easy and delicious recipe. Count 110g of gorgonzola for 3 pears! Arrange the pears in thin strips on puff pastry, sprinkle with gorgonzola and chopped hazelnuts, and you’re done.

Pair it with a round, rich white wine to coat the fatty flavors of gorgonzola, like Domaine Haut Gléon.

 

  • Soft-boiled egg with pan-fried mushrooms

The secret to a tasty pan? Seasoning! Don’t hesitate to be generous with parsley, garlic and shallots, and why not a touch of whole cream? A guaranteed delight. When it comes to mushrooms, the season offers plenty to choose from: chanterelles, ceps, portobellos, there’s something for everyone.

Pair with a ripe, fruity red wine with silky tannins, such as Château Haut Gléon.

 

  • Stuffed cabbage with duck confit

Yes, we know, kale isn’t always your best friend! But with this duck confit recipe, you’ll make up for it! It requires a little patience, as the previously blanched leaves need to be stuffed and then closed with string. For the stuffing, we prepare duck confit with garlic, a little cooked rice, spices of your choice and parsley. Stuffed cabbage parcels are cooked in a casserole dish with chicken stock and tomato paste. The ideal Sunday meal.

Pair it with a spicy, aromatic red wine like our Versant syrah.

 

  • Apple cinnamon cake

What would autumn be without a cinnamon recipe? A classic that will delight young and old alike, and that we never tire of. 200g flour, 50g hazelnut powder, 100g butter, 100g sugar, 2 eggs and 3 teaspoons cinnamon. Add the thinly sliced apples and bake for 30 minutes at 180°C.

If your meal was accompanied by a white wine, you can extend it for this dessert!
