The festive season is fast approaching, and with it the desire to share delicious meals with family and friends. But how do you keep everyone happy? Here’s our selection of the best holiday recipes with a modern twist, for a light, flavorful meal! Using fresh, seasonal produce, we mix modernity and tradition to please everyone and stand out from the crowd without spending 2 days in the kitchen!

A colorful starter that will surprise your guests! With its tangy notes and sweet-savory mix, this recipe is full of flavour!

1. Julienne 2 small cooked beets and a granny apple. Mix in a bowl with raspberry vinegar, fresh chives, olive oil and a squeeze of lime juice. Set aside.

2. Prepare 150g fresh goat’s cheese with 2 tablespoons full cream, season.

3. Use dressing circles to assemble the tartare. Fill each circle with the beet and apple mixture, packing lightly to form a compact base. Place a generous layer of goat’s cheese cream on top of the tartare. Add crushed walnuts and pomegranate seeds, and serve!

Cod fillet in almond crust with watercress cream.

This year, for the holidays, we’re opting for the fish option! We twist the classic recipe with a delicious almond crust and watercress cream. A clever blend of textures that’s sure to please everyone, even children.

  1. Mix 80g almond powder, 40g breadcrumbs and a drizzle of olive oil until you obtain a sandy paste.
  2. Brush the cod with oil. Place in an ovenproof dish and cover with the almond mixture. Add the flaked almonds and bake at 180°C for around 15 min.
  3. For the watercress cream: Wash and remove leaves from watercress. Peel shallots and chop finely. In a large saucepan, heat a dash of olive oil and sweat the shallots with a pinch of salt. Add the watercress leaves and sauté for a few minutes before pouring in 15cl of chicken stock. Reduce by half over a high heat, then add 20cl full cream and cook for around 20 minutes. When the cream has reached a “coating” consistency, strain and adjust the seasoning.

The perfect dessert with the trendiest ingredient of the moment, matcha!

For the meringue :

  • 4 egg whites
  • 200 g powdered sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon white vinegar or lemon juice
  • 1 pinch salt

For the matcha tea cream :

  • 250 ml chilled full-fat cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon matcha tea powder (culinary grade)

For the garnish :

  • 1 ripe mango
  • 2 kiwis
  • 2 passion fruits
  • A few cape gooseberries or pineapple pieces (optional)
