Probably the world’s most emblematic grape variety, it embodies the very essence of red wine, with all its history, structure and complexity. The origins and history of Cabernet Sauvignon

Cabernet Sauvignon was born in the Médoc, the holy land of French wine. This has made it one of the pillars of Bordeaux blending. It is the most beautiful child of the natural marriage between Cabernet Franc and Sauvignon Blanc. A robust child capable of withstanding the vagaries of the climate, it quickly won over winemakers on many terroirs for its regular yield.

First and foremost, this grape variety stands out for its deep, intense color: the crimson of its tannins, which were sometimes purplish in its early history, have come to resemble ruby over time. Its color is a prelude to the first powerful sip. On the other hand, it’s a grape variety that stands out for its tannic structure. Robust, especially in young wines, the structure softens with age, making it ideal for the cultivation of great ageing wines.

Some discerning noses recognize the aromatic bouquet of Cabernet. Like many grape varieties, its aromas are intimately linked to the terroir where it is planted and the climate. When yields are perfectly controlled, Cabernet Sauvignon brings power and structure to wines, which develop with age. But sometimes, the most widely recognized aroma that develops is bell pepper and herbaceousness. After a few years of ageing, the cuvées offer great aromatic complexity, with notes of ripe fruit, cigar aromas, spices and cedar. Wines made from Cabernet Sauvignon are also renowned for their persistence and long, fresh, sometimes minty finish. Moreover, after several years of ageing, the tannins of this variety mellow, becoming silkier and less drying.

What wines to drink from Cabernet Sauvignon?

Of course, the great wines of Bordeaux praise this grape variety, which is as old as the appellation itself. But for a number of years now, this emblematic grape variety has been steadily gaining in importance in the Languedoc-Roussillon vineyards. On this terroir, we now have some very fine single-varietal and blended cuvées. Over the past twenty years, they have reshuffled the deck when it comes to working with this grape variety, thanks to the Languedoc’s specific soil, climate and winemaking processes. In essence, Languedoc Cabernet Sauvignon cuvées are wines of character, where the Mediterranean sun and the diversity of terroirs have come to tickle the emblematic Bordeaux grape.
